Spinach chorizo halloumi salad

This is a perfect recipe for during your period as it contains lots of iron-rich greens and slow-release carbs. Orecchiette means “little ears” in Italian, as you can see from the shape.

Ingredients

Ingredients
  • 150ml white wine
  • 2 cloves garlic, crushed
  • 2 red chillies, deseeded and chopped
  • 300g peas
  • 150ml water
  • 100g spinach, washed
  • Salt and freshly ground black pepper
  • 440g orecchiette
  • 2tbsp chopped fresh flat leaf parsley
  • Extra virgin olive oil for drizzling

Recipe

  1. Put the wine, garlic and chillies into a large pan
  2. Bring to the boil, then reduce the heat to medium and simmer well until the volume has reduced by half
  3. Add the peas to the pan with the water and simmer for 2 minutes
  4. Add the spinach and stir quickly to wilt, then remove from the heat
  5. Remove half the pea/spinach mix from the pan
  6. Blitz in a blender
  7. Return it to the pan and season well.
  8. Add the pasta to a pan of boiling water and cook for 10-12 minutes
  9. Drain.
  10. Toss the pasta with the sauce, add the parsley and mix well. Season
  11. Serve drizzled with olive oil

Pasta will give you the carbohydrate fix you need in this phase. use whole grain pasta for higher nutritional content and longer lasting energy (the seeds of the grain are still intact, so the pasta is digested at a slower pace and releases energy more gradually).
